Ingredients
Scale
- 1.5 lbs boneless, skinless chicken thighs, cut into 1-inch pieces
- 1/4 cup honey
- 2 tablespoons lime juice
- 2 tablespoons soy sauce
- 1 tablespoon sriracha (or more, to taste)
- 1 teaspoon ground ginger
- 1 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Step 1: In a medium bowl, whisk together honey, lime juice, soy sauce, sriracha, ginger, garlic powder, salt, and pepper.
- Step 2: Add the chicken pieces to the bowl and toss to coat evenly with the honey-lime sauce. Marinate for at least 30 minutes, or up to 2 hours in the refrigerator.
- Step 3: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Step 4: Arrange the marinated chicken pieces in a single layer on the prepared baking sheet.
- Step 5: Bake for 20-25 minutes, or until the chicken is cooked through and the sauce is slightly caramelized, flipping halfway through.
- Step 6: Serve immediately. Enjoy!
Notes
- Store leftover Spicy Honey Lime Chicken in an airtight container in the refrigerator for up to 3 days.
- Reheat gently in a microwave or skillet to avoid overcooking and drying out the chicken.
- Serve this vibrant chicken over fluffy rice or quinoa, and garnish with toasted sesame seeds for extra crunch and visual appeal.
- For a deeper, richer flavor, try marinating the chicken overnight—the longer it sits, the more the flavors meld!
