  • 4 large orange bell peppers
  • 1 pound ground beef
  • 1 medium yellow onion, chopped
  • 1 (15-ounce) can tomato sauce
  • 1 cup cooked rice
  • 1 cup shredded cheddar cheese
  • 1 teaspoon chili powder
  • 1/2 teaspoon garlic powder

Instructions

  1. Step 1: Preheat oven to 375°F (190°C). Cut the tops off the bell peppers and remove the seeds and membranes. Carve a jack-o'-lantern face on one side of each pepper using a sharp knife.
  2. Step 2: In a large skillet, brown the ground beef over medium heat. Drain off any excess grease. Add the chopped onion and cook until softened, about 5 minutes.
  3. Step 3: Stir in the tomato sauce, cooked rice, chili powder, and garlic powder. Mix well and simmer for 5 minutes.
  4. Step 4: Stuff each bell pepper with the ground beef mixture, packing it in firmly. Place the stuffed peppers in a baking dish.
  5. Step 5: Pour a little water (about 1/2 inch) into the bottom of the baking dish. Cover the dish with foil and bake for 30 minutes. Remove the foil, sprinkle the tops of the peppers with shredded cheddar cheese, and bake for another 10-15 minutes, or until the cheese is melted and bubbly and the peppers are tender.

Notes

  • Leftover stuffed peppers can be stored in an airtight container in the refrigerator for up to 3 days, making them perfect for meal prepping!
  • Reheat individual peppers in the microwave for a quick lunch, or warm them in the oven for a more even temperature.
