Ingredients
- All-purpose flour: 2 1/4 cups
- Unsalted butter, softened: 1 cup (2 sticks)
- Granulated sugar: 3/4 cup
- Brown sugar, packed: 3/4 cup
- Eggs: 2 large
- Vanilla extract: 1 teaspoon
- Chopped pecans: 1 cup
- Baking soda: 1 teaspoon
Instructions
- Step 1: Preheat oven to 375°F (190°C). Line baking sheets with parchment paper.
- Step 2: In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla extract.
- Step 3: In a separate bowl, whisk together the flour and baking soda. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Stir in the chopped pecans.
- Step 4: Drop rounded tablespoons of dough onto the prepared baking sheets, leaving some space between each cookie.
- Step 5: Bake for 9-11 minutes, or until the edges are golden brown. Let cool on baking sheets for a few minutes before transferring to a wire rack to cool completely.
Notes
- For the best flavor, store frosted cookies in an airtight container at room temperature to keep them soft and chewy.
- If you'd like a warm, gooey treat, microwave a frosted cookie for about 5-10 seconds – just until slightly softened!
- These cookies are delicious with a scoop of vanilla ice cream or a warm cup of coffee for a cozy dessert.
- To enhance the pecan flavor, lightly toast the chopped pecans in a dry skillet before adding them to the dough.
