- Cottage cheese: 16 ounces
- Eggs: 6 large
- Milk: 1/2 cup
- Shredded cheddar cheese: 1 cup
- Cooked ham or bacon, diced: 1 cup
- Green onions, chopped: 1/4 cup
- Salt: 1/2 teaspoon
- Black pepper: 1/4 teaspoon
Instructions
- Step 1: Preheat oven to 350°F (175°C). Grease a 9×13 inch baking dish.
- Step 2: In a large bowl, whisk together the cottage cheese, eggs, milk, salt, and pepper until well combined.
- Step 3: Stir in the shredded cheddar cheese, diced ham or bacon, and chopped green onions.
- Step 4: Pour the mixture into the prepared baking dish, spreading evenly.
- Step 5: Bake for 30-35 minutes, or until the egg bake is set and lightly golden brown on top.
- Step 6: Let cool for a few minutes before slicing and serving.
Notes
- Leftovers can be stored in the refrigerator for up to 3 days in an airtight container.
- For a quick reheat, microwave individual slices until warmed through, or bake covered in a low oven to prevent drying.
- Serve each slice with a dollop of sour cream or a spoonful of salsa for added flavor and moisture.
