- Chicken sausage, sliced: 1 pound
- Sweet potatoes, peeled and cubed: 2 medium
- Olive oil: 2 tablespoons
- Garlic, minced: 4 cloves
- Honey: 3 tablespoons
- Soy sauce: 2 tablespoons
- Red pepper flakes: 1/4 teaspoon (optional)
- Fresh parsley, chopped: 2 tablespoons
Instructions
- Step 1: Preheat oven to 400°F (200°C). Toss the cubed sweet potatoes with 1 tablespoon of olive oil, salt, and pepper on a baking sheet. Roast for 15 minutes.
- Step 2: While the sweet potatoes are roasting, prepare the honey garlic sauce. In a small bowl, whisk together the minced garlic, honey, soy sauce, and red pepper flakes (if using).
- Step 3: Remove the baking sheet from the oven and add the sliced chicken sausage to the sheet with the sweet potatoes. Drizzle the remaining 1 tablespoon of olive oil over the sausage and potatoes.
- Step 4: Pour the honey garlic sauce evenly over the sausage and sweet potato mixture.
- Step 5: Return the baking sheet to the oven and continue roasting for another 15-20 minutes, or until the sweet potatoes are tender and the sausage is cooked through and lightly browned, stirring halfway through to ensure even cooking and sauce distribution.
- Step 6: Garnish with fresh parsley before serving.
