- Ground beef: 1 pound
- Cheese tortellini: 20 ounces (refrigerated or frozen)
- Enchilada sauce: 1 (10 ounce) can
- Shredded cheddar cheese: 2 cups
- Onion, chopped: 1/2 medium
- Taco seasoning: 1 packet (1 ounce)
- Olive oil: 1 tablespoon
- Sour cream: for topping (optional)
Instructions
- Step 1: Preheat oven to 375°F (190°C). Lightly grease a 9×13 inch baking dish.
- Step 2: In a large skillet, heat olive oil over medium heat. Add ground beef and chopped onion. Cook until beef is browned, crumbling the beef as it cooks. Drain off any excess grease.
- Step 3: Stir in taco seasoning and enchilada sauce into the cooked beef mixture. Simmer for 5 minutes, stirring occasionally.
- Step 4: Cook tortellini according to package directions. Drain well.
- Step 5: Add the cooked tortellini to the beef and sauce mixture in the skillet. Stir to combine evenly.
- Step 6: Pour the tortellini mixture into the prepared baking dish. Top evenly with shredded cheddar cheese. Bake for 20-25 minutes, or until the cheese is melted and bubbly. Let cool slightly before serving. Top with sour cream if desired.
