Ingredients
- Ground beef, 1 pound
- Taco seasoning, 1 packet (1 ounce)
- Cheddar cheese, shredded, 2 cups
- Flour tortillas, 8-inch, 6 count
- Onion, finely chopped, 1/2 cup
- Dill pickle slices, chopped, 1/2 cup
- Ketchup, for dipping, as needed
Instructions
- Step 1: Brown the ground beef in a skillet over medium-high heat. Drain off any excess grease.
- Step 2: Stir in the taco seasoning and 1/4 cup of water. Simmer for 5 minutes, or until the liquid is absorbed.
- Step 3: Spread half of the ground beef mixture on one half of each tortilla.
- Step 4: Sprinkle evenly with cheddar cheese, chopped onion and chopped pickle slices.
- Step 5: Fold the tortillas in half to form quesadillas.
- Step 6: Cook in a lightly oiled skillet or on a griddle over medium heat for 2-3 minutes per side, or until golden brown and the cheese is melted. Serve immediately with ketchup for dipping.
Notes
- To prevent soggy quesadillas, store leftovers in an airtight container in the fridge and reheat within 2 days.
- For a crispier reheat, try using a dry skillet or air fryer instead of the microwave.
- Serve these quesadillas with a side of seasoned fries or a simple coleslaw for a complete meal.
