Ingredients
Scale
- 1 1/2 cups Bisquick baking mix
- 1/2 cup mashed ripe banana (about 1 large)
- 1/2 cup milk
- 1/4 cup sugar
- 1 large egg
- 1/4 cup vegetable oil
- 1/2 teaspoon ground cinnamon
Instructions
- Step 1: Preheat oven to 400°F (200°C). Grease a 12-cup muffin tin or line with paper liners.
- Step 2: In a large bowl, combine Bisquick, mashed banana, milk, sugar, egg, vegetable oil, and cinnamon.
- Step 3: Stir until just moistened. Do not overmix; a few lumps are okay.
- Step 4: Fill each muffin cup about 2/3 full.
- Step 5: Bake for 15-18 minutes, or until a wooden skewer inserted into the center comes out clean.
- Step 6: Let muffins cool in the tin for a few minutes before transferring them to a wire rack to cool completely.
Notes
- Store cooled muffins in an airtight container at room temperature for up to 3 days to keep them soft.
- For a warm treat, microwave individual muffins for 10-15 seconds.
- Enjoy these muffins with a dollop of whipped cream or a sprinkle of powdered sugar for an extra touch.
- Don't overmix the batter; a few banana lumps ensure a tender, moist muffin, so stir just until combined.
