- Cooked rice, preferably day-old: 2 cups
- Eggs: 2 large
- Cooked breakfast sausage or bacon, chopped: 1/2 cup
- Frozen mixed vegetables (peas, carrots, corn): 1/2 cup
- Soy sauce: 2 tablespoons
- Sesame oil: 1 teaspoon
- Green onions, chopped: 2 tablespoons
- Vegetable oil: 1 tablespoon
Instructions
- Step 1: Heat vegetable oil in a large skillet or wok over medium-high heat. Add the frozen mixed vegetables and cook for 2-3 minutes, until slightly softened.
- Step 2: Push the vegetables to one side of the skillet. Crack the eggs into the empty space and scramble them until cooked through.
- Step 3: Add the cooked rice and chopped sausage/bacon to the skillet. Break up any large clumps of rice.
- Step 4: Pour the soy sauce and sesame oil over the rice mixture. Stir everything together well, ensuring the rice is evenly coated.
- Step 5: Cook for 3-4 minutes, stirring frequently, until the rice is heated through and slightly crispy.
- Step 6: Garnish with chopped green onions and serve immediately.

- Leftovers can be stored in an airtight container in the refrigerator for up to 2 days.
