- Honey: 2 tablespoons
- Red pepper flakes: 1/2 teaspoon (or more, to taste)

- Black pepper: 1/4 teaspoon
- Crumbled feta cheese: 2 ounces
Instructions
- Step 1: Preheat oven to 400°F (200°C). Toss carrots with olive oil, honey, red pepper flakes, garlic, salt, and pepper in a large bowl.
- Step 2: Spread carrots in a single layer on a baking sheet.
- Step 3: Roast for 20-25 minutes, or until carrots are tender and slightly caramelized, flipping halfway through.
- Step 4: Remove from oven and transfer the roasted carrots to a serving dish.
- Step 5: Sprinkle the crumbled feta cheese evenly over the carrots. Serve immediately.
Notes
- Leftovers keep well in the fridge for up to 3 days; the honey glaze will thicken beautifully.
