Ingredients
- Chicken breasts, boneless and skinless: 2 (6-8 oz each)
- Brioche buns: 2
- Mayonnaise: 1/2 cup
- Sriracha sauce: 1-2 tablespoons (adjust to taste)
- Honey: 1 teaspoon
- Garlic powder: 1/2 teaspoon
- Paprika: 1 teaspoon
- Pickle slices: as needed
Instructions
- Step 1: Prepare the chicken. Pound the chicken breasts to an even thickness (about 1/2 inch). Season with salt, pepper, paprika, and garlic powder.
- Step 2: Cook the chicken. Heat a skillet over medium-high heat with a tablespoon of oil. Cook the chicken for 5-7 minutes per side, or until cooked through and internal temperature reaches 165°F (74°C). Let rest for a few minutes before slicing, if desired.
- Step 3: Make the spicy sauce. In a small bowl, whisk together mayonnaise, Sriracha sauce, and honey until smooth. Taste and adjust the Sriracha to your desired level of spiciness.
- Step 4: Toast the buns. Lightly toast the brioche buns.
- Step 5: Assemble the sandwiches. Spread the spicy sauce on both halves of the toasted buns. Place the cooked chicken on the bottom bun. Top with pickle slices.
Notes
- Store leftover cooked chicken separately from the sauce and buns to prevent sogginess.
- Reheat the chicken in a skillet or microwave until warmed through, then assemble your sandwich fresh for the best texture.
- Serve your spicy chicken sandwich with a side of crunchy coleslaw to balance the heat and add some cool freshness.
- For extra flavor, try marinating the chicken in a mixture of olive oil, lemon juice, and your favorite herbs for at least 30 minutes before cooking.
