Delicious skewered chicken salami eyeballs recipe with detailed instructions and nutritional information.

  • Total Time: 35 minutes
  • Yield: 4 servings

Ingredients

  • Chicken Salami: 1 package (approx. 8 oz)
  • Mozzarella Balls (small, pearl size): 24
  • Black Olives (pitted): 12
  • Fresh Basil Leaves: 24
  • Cherry Tomatoes: 12
  • Balsamic Glaze: 2 tablespoons
  • Wooden Skewers: 12
  • Olive Oil: 1 tablespoon

Instructions

  1. Step 1: Cut each chicken salami slice into quarters. You should have small, bite-sized pieces.
  2. Step 2: Cut each black olive in half lengthwise to create the "pupils" for the eyeballs.
  3. Step 3: Take a mozzarella ball and gently press a half olive into the center to create an "eyeball".
  4. Step 4: Thread a salami piece, a basil leaf, a mozzarella "eyeball", and then another basil leaf onto each skewer. Repeat this one more time so each skewer holds two sets.
  5. Step 5: Cut cherry tomatoes in half. Place a half of cherry tomato on top of the skewers to create a fun garnish.
  6. Step 6: Drizzle the skewers with balsamic glaze and a light brushing of olive oil before serving.

Notes

  • Store leftover skewers in an airtight container in the refrigerator for up to 24 hours.
  • Reheat gently in the microwave for a few seconds, but avoid overheating to prevent the mozzarella from melting excessively.
  • Serve these skewers as a spooky and delicious appetizer for Halloween parties or themed events.
  • For extra flavor, marinate the salami pieces in a blend of Italian herbs and olive oil for 30 minutes before assembling the skewers.
