Ingredients

  • All-purpose flour: 1 1/2 cups
  • Cold unsalted butter, cubed: 1/2 cup (1 stick)

Instructions

  1. Step 1: Preheat oven to 375°F (190°C). In a medium bowl, whisk together flour, powdered sugar, and salt. Cut in cold butter using a pastry blender or your fingers until the mixture resembles coarse crumbs.
  2. Step 2: Press the flour mixture firmly into the bottom of an ungreased 9×13 inch baking pan. Bake for 15-20 minutes, or until lightly golden.
  3. Step 3: While the crust is baking, prepare the peach filling. In a large bowl, combine sliced peaches, granulated sugar, cornstarch, and lemon juice. Gently toss to coat.
  4. Step 4: Remove the pre-baked crust from the oven and pour the peach filling evenly over the crust.
  5. Step 5: Return the pan to the oven and bake for 25-30 minutes, or until the filling is bubbly and the crust is golden brown.
