- All-purpose flour: 1 1/2 cups
- Cold unsalted butter, cubed: 1/2 cup (1 stick)
- Powdered sugar: 1/4 cup
- Salt: 1/4 teaspoon
- Large ripe peaches, peeled and sliced: 4 cups
- Granulated sugar: 1/2 cup
- Cornstarch: 2 tablespoons
- Lemon juice: 1 tablespoon
Instructions
- Step 1: Preheat oven to 375°F (190°C). In a medium bowl, whisk together flour, powdered sugar, and salt. Cut in cold butter using a pastry blender or your fingers until the mixture resembles coarse crumbs.
- Step 2: Press the flour mixture firmly into the bottom of an ungreased 9×13 inch baking pan. Bake for 15-20 minutes, or until lightly golden.
- Step 3: While the crust is baking, prepare the peach filling. In a large bowl, combine sliced peaches, granulated sugar, cornstarch, and lemon juice. Gently toss to coat.
- Step 4: Remove the pre-baked crust from the oven and pour the peach filling evenly over the crust.
- Step 5: Return the pan to the oven and bake for 25-30 minutes, or until the filling is bubbly and the crust is golden brown.
- Step 6: Let the bars cool completely before cutting into squares. Dust with powdered sugar, if desired, before serving.

- Store leftover peach bars in an airtight container in the refrigerator to keep them fresh and prevent the crust from getting soggy.
- For a warm and gooey treat, gently reheat individual bars in the microwave for a few seconds, or in a low oven.
