Ingredients

  • All-purpose flour: 1 1/2 cups

Instructions

  1. Step 1: Preheat oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
  2. Step 2: In a large bowl, whisk together flour, cocoa powder, sugar, baking soda, and salt. In a separate bowl, combine eggs, oil, milk, and vanilla. Add the wet ingredients to the dry ingredients and mix until just combined. Gently fold in 1/2 cup of the raspberries.
  3. Step 3: Pour batter into the prepared cake pan and bake for 30-35 minutes, or until a wooden skewer inserted into the center comes out clean. Let cool in the pan for 10 minutes before inverting onto a wire rack to cool completely.
  4. Step 4: While the cake is cooling, melt the chocolate chips in a double boiler or microwave until smooth. Let cool slightly. In a large bowl, whip the heavy cream with powdered sugar until stiff peaks form. Gently fold in the melted chocolate.
  5. Step 5: Slice the cooled cake horizontally into two layers. Place the bottom layer on a serving plate and spread half of the chocolate mousse over it. Sprinkle with the remaining 1 cup raspberries. Top with the second cake layer and spread the remaining mousse over the top.
  6. Step 6: Refrigerate for at least 2 hours before serving to allow the mousse to set.
