Ingredients

  • Chicken breasts: 2 (6-8 oz each)
  • Sweet potatoes: 2 medium
  • Olive oil: 2 tablespoons
  • Tzatziki sauce: 1/2 cup

  • Spinach: 5 oz
  • Lemon: 1, juiced
  • Spices (Paprika, Garlic Powder, Onion Powder, Salt, Pepper): 1 teaspoon each

Instructions

  1. Step 1: Preheat oven to 400°F (200°C). Peel and cut sweet potatoes into fries. Toss with 1 tablespoon olive oil, paprika, garlic powder, onion powder, salt and pepper. Spread on a baking sheet and bake for 20-25 minutes, flipping halfway through, until golden brown and tender.
  2. Step 2: While sweet potatoes are baking, prepare the chicken. Drizzle chicken breasts with remaining olive oil, lemon juice, salt, and pepper. Grill over medium heat for 6-8 minutes per side, or until cooked through and internal temperature reaches 165°F (74°C). Let rest for 5 minutes and then slice.
  3. Step 3: While chicken rests, wash and prepare spinach.
  4. Step 4: Assemble the power bowls: Divide spinach between two bowls. Top with sliced grilled chicken, sweet potato fries, and a generous dollop of tzatziki sauce.
  5. Step 5: Sprinkle with crumbled feta cheese and serve immediately.
