Ingredients
- Cooked chicken, shredded: 1 cup
- Pepperoni slices: 1/2 cup
- Pizza sauce: 1/4 cup
- Mozzarella cheese, shredded: 1 cup
- Italian seasoning: 1/2 teaspoon
- Butter, softened: 2 tablespoons
- Bread slices: 4 slices
- Olive oil: 1 teaspoon
Instructions
- Step 1: In a small bowl, combine the shredded chicken, pepperoni slices, pizza sauce, mozzarella cheese, and Italian seasoning. Mix well.
- Step 2: Spread softened butter on one side of each bread slice.
- Step 3: Place two slices of bread, butter-side down, in a non-stick skillet over medium heat.
- Step 4: Evenly spread the chicken pepperoni mixture on top of the bread slices in the skillet.
- Step 5: Top with the remaining two slices of bread, butter-side up. Brush the top of the bread lightly with olive oil.
- Step 6: Grill for 3-4 minutes per side, or until the bread is golden brown and the cheese is melted and gooey. Serve immediately.
Notes
- Refrigerate leftovers immediately and wrap tightly to prevent the bread from getting soggy.
- For best results, reheat in a skillet over low heat to re-melt the cheese and crisp the bread, avoiding a microwave.
- Serve with a side of warm pizza sauce for dipping to enhance the pizza flavor.
- Don't overcrowd the skillet; grill one or two sandwiches at a time for even browning and optimal cheese melt.
