Ingredients

  • Ladyfingers: 24
  • Mascarpone cheese: 16 ounces
  • Heavy cream: 1 cup
  • Amaretto liqueur: 1/2 cup
  • Fresh cherries, pitted and halved: 1 1/2 cups
  • Granulated sugar: 1/2 cup
  • Strong brewed coffee, cooled: 1 cup
  • Unsweetened cocoa powder: for dusting

Instructions

  1. Step 1: In a bowl, beat the mascarpone cheese and granulated sugar until smooth and creamy. In a separate bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the mascarpone mixture.
  2. Step 2: In a shallow dish, combine the cooled coffee and Amaretto liqueur. Briefly dip each ladyfinger into the coffee mixture, being careful not to soak them completely.
  3. Step 3: Arrange half of the soaked ladyfingers in a single layer in the bottom of a baking dish. Spread half of the mascarpone cream mixture over the ladyfingers, then top with half of the halved cherries.
  4. Step 4: Repeat layers with the remaining ladyfingers, mascarpone cream mixture, and cherries.
  5. Step 5: Cover the tiramisu with plastic wrap and refrigerate for at least 4 hours, or preferably overnight, to allow the flavors to meld.
  6. Step 6: Before serving, dust the tiramisu generously with unsweetened cocoa powder.

Notes

  • For optimal flavor and texture, always chill the tiramisu for at least 4 hours; it's even better if you let it sit overnight!
  • Reheating isn't recommended as it can affect the texture, but if you must, try a small portion at room temperature for a few minutes.
  • Serve chilled with a dollop of whipped cream and a few extra fresh cherries for an elegant presentation.
  • Don't over-soak the ladyfingers; a quick dip is all they need to prevent a soggy tiramisu!
